Anita's Healthy Oatmeal Bites

This is a great recipe for a healthy breakfast or easy grab and go snack. I vary the recipe nearly every time I make it. You can use thawed frozen banana. They produce a sweet-syrup that acts as the glue that binds it together. I like to use mini-muffin tins, but you can use larger ones, a muffin top pan or a glass pyrex dish and cut into squares.
Ingredients
  • 3 very ripe banana
  • 2 cups of regular oats
  • 1 cup raisins
  • Olive Oil Spray
  • Other great add-Ins…
  • toasted almonds or other nuts
  • chopped prunes
  • chopped dried apricots
  • chopped mango
  • cherries
  • chocolate chips
  • toasted coconut
  • cocoa powder
  • flax seeds
  • vanilla extract
Instructions
  1. Preheat the oven to 325 degrees.
  2. Add banana to a bowl and mash, add oatmeal (I use Bob’s Red Mill Gluten Free Oats) & raisins. If mixture is too dry add applesauce. If it is too loose add more oatmeal.
  3. Spray the muffin pan well & add the mixture to each cup.
  4. Bake for 20-25 minutes. I like to top brown for a few minutes on broil, but you must watch them and not get distracted!
