This is a great recipe for a healthy breakfast or easy grab and go snack. I vary the recipe nearly every time I make it. You can use thawed frozen banana. They produce a sweet-syrup that acts as the glue that binds it together. I like to use mini-muffin tins, but you can use larger ones, a muffin top pan or a glass pyrex dish and cut into squares.
Ingredients
3 very ripe banana
2 cups of regular oats
1 cup raisins
Olive Oil Spray
Other great add-Ins…
toasted almonds or other nuts
chopped prunes
chopped dried apricots
chopped mango
cherries
chocolate chips
toasted coconut
cocoa powder
flax seeds
vanilla extract
Instructions
Preheat the oven to 325 degrees.
Add banana to a bowl and mash, add oatmeal (I use Bob’s Red Mill Gluten Free Oats) & raisins. If mixture is too dry add applesauce. If it is too loose add more oatmeal.
Spray the muffin pan well & add the mixture to each cup.
Bake for 20-25 minutes. I like to top brown for a few minutes on broil, but you must watch them and not get distracted!
