Paleo Mayo
  • 1 large egg
  • 2 Tbsp lemon juice
  • ¼ cup light-tasting olive oil
  • + 1 extra cup light-tasting olive oil (not extra-virgin)
  • ½ tsp salt
  1. Place the egg and lemon juice in a blender or food processor.
  2. Cover and allow them to come to room temperature, about 30 minutes.
  3. Add ¼ cup of oil and salt.
  4. Blend on medium speed until the ingredients are combined.
  5. With the motor still running, drizzle in the remaining one cup of oil in a very thin stream for 2-3 minutes.
  6. Store covered in the refrigerator.
